Quick Crab Bake

IMG_7155  For that night when I was being lazy, I threw this together and served it over pasta, but it would also be great over quinoa or rice.

1 pkg crab meat – or imitation if you prefer – I used about a pound but the recipe can be adjusted for less of more

1/2 white onion – chopped

3 to 4 small peppers – I used red, yellow and orange for color – chopped

1/4 cup butter

2 tbs flour

1 tbs mustard seeds

1/2 cup shredded parmesan

1/2 cup shredded romano cheese

1/2 cup shredded pepper jack cheese

1 cup sour cream

1 cup broccoli crowns – chopped up into smaller pieces

Heat the oven to 400 degrees.

In a skillet, melt about half the butter.  Saute the onions and peppers with the mustard seeds.  Once the onions and peppers are soft, add the broccoli.  Saute for about 2 minutes, or until the broccoli is a desired texture.

Add the sour cream and additional butter. Allow to melt.  Add all the cheeses.  Once those are melted, toss in the crab meat.  Add some salt and pepper if you so desire.

Transfer the mixture to an oven proof baking dish.  Bake for 10 to 15 minutes.  Done!
