Roast Cauliflower

IMG_6150 A quick and simple side dish, this was modified from a Cooking Light recipe to make it easier!


cauliflower – for 2 people, I used half a small head (this recipe made plenty of sauce) – chopped into florets for individual servings

2 tbs olive oil (plus extra for drizzling)

salt and pepper – to taste

juice of 1 lime

1 clove garlic – chopped

3 tbs Dijon mustard

1 tbs canola oil


Heat the oven to 450.

Line a baking sheet with foil and spread out the cauliflower florets.   Drizzle with olive oil.  Bake for 20 minutes, tossing about 10 minutes in to evenly cook.

As cauliflower cooks, in a small bowl, combine olive oil, salt and pepper (if desired), lime juice, garlic, mustard and canola oil.  Whisk with a fork until well combined.  Serve over cauliflower for a flavorful side dish!
