pasta – use gluten-free of course, and this can be made with any kind of noodles
a handful of golden grape tomatoes
2 sausages – cooked and sliced – mine were spicy chicken
2 cups fresh spinach
1/4 cup chopped fresh basil
3 heaping tbs cream cheese
2 heaping tbs sour cream
1/2 tsp lemon rind
juice of 1 lemon
salt and pepper – to taste
1/8 tsp nutmeg
1 garlic clove – chopped
shredded Parmesan as topping
Cook pasta according to recipe, and cook sausage if not pre-cooked.
Drain pasta but retain 1 cup of the water in a sauce pan. Add cream cheese and sour cream to the water. Allow cream cheese to melt, then add lemon juice and rind plus nutmeg and garlic and allow to simmer for 2 to 3 minutes. Then add the spinach and noodles. Stir until the spinach is wilted. Add the sausage and tomatoes then the basil last. Add salt and pepper as desired.
Plate and top with Parmesan cheese. Serve alongside a glass of of dry white wine.
