Gluten-free Granola Bars

IMG_5346These chewy little guys were a bit hit!  And so easy to make – no baking involved, which is my favorite.


2 cups gluten-free oats

1/2 cup agave syrup

1/2 cup chopped dates

1/2 cup packed brown sugar

1 tsp vanilla

1/2 cup peanut butter


Line a 6 x 6 baking pan with foil, making sure to go up the sides for easy removal.  You can use a bigger pan for thinner bars or a smaller pan for thicker bars.

Have your oats and dates in a large, heat proof bowl.

In a large sauce pan, boil the sugar and syrup.  Once it is at a rolling boil, stir in the peanut butter and stir until melted and well combined.  While stirring, add the vanilla.

Immediately dump this mixture into the oats and stir until oats are well coated.  Press into your prepared pan.  Set aside and allow to cool.  The mixture will set and once cool you can cut it into desired size bars. They make a delicious snack!
