Chicken Salad

IMG_5347  This was a quick and easy recipe that is great by itself or on sandwiches!  I’ve made it in a variety of ways too, so try tuna or even crab in place of chicken.  Try other veggies, as well!

Ingredients:

2 chicken breasts

1 cup shredded Parmesan cheese

1/2 cup golden baby tomatoes (or any other small tomato variety)

1 cup mayo

1 shallot – chopped

2 chives – chopped

2 cloves garlic – chopped

pepper – to taste

Preparation:

Simple!  Mix everything together.  If you find you’d like it creamier, add more mayo.  If you’d like less, add less. It’s a fun recipe to make your own; this is just my favorite combination.
