Dijon Garlic Chicken

IMG_5154This was a quick way to make a tasty chicken breast!  The delicious rub was a blend of just a couple ingredients, then a quick jaunt in the oven and it was done!  I cooked it alongside some broccoli to save time.

Ingredients:

chicken breasts – this made enough for two

1/4 cup dijon mustard

2 garlic cloves – chopped

2 to 3 chives – chopped small

pepper – to taste

2 tbs fresh parsley – chopped

2 tbs olive oil

Preparation:

Heat oven to 450.

In a bowl, mix the mustard, garlic, chives, pepper and parsley in with the olive oil.  Coat each piece of chicken, on both sides with the mixture.  Bake for 20 to 25 minutes or until chicken is done!  That’s it!  So easy, you’ll never believe the flavors you get in this dish.  Try it with a glass of spicy red wine, like a good Zin.
