3 cups gluten-free oats
1 cup peanut butter
1/2 cup sour cream
1/4 cup unsalted butter
1 tsp vanilla
2 cups sugar
Line cookie sheets with parchment paper – I used two and that was enough for all cookies. This recipe can make many cookies or few, depending on how big you want to make them.
In a large bowl, measure out the 3 cups of oats. Set aside.
In a large sauce pan, add sugar, butter and sour cream. Stir until all are melted together. Allow to come to a rolling boil, stirring occasionally. Let boil on high for 1 minute. Stir in the peanut butter and remove from heat. Continue to stir until the peanut butter is melted in then add the vanilla.
Add the peanut butter mixture into the oats and stir until oats are well coats. Quickly spoon out the mixture onto the parchment paper covered cookie sheets. These will set up fast and make a super cookie!
