Chicken – cooked as desired
2 Anaheim chilies
1 cup sour cream
1/4 cup cream cheese
pepper – to taste
1/4 cup cilantro – whole leaves
Begin cooking your chicken as desired. Baked, sauteed, fried, whatever!
In a medium sauce pan, melt the cream cheese, stirring occasionally. As this is cooking, chop one of your chilies and saute it in a dry skillet, for 1 to 2 minutes. Remove from pan and set aside. For the remaining chili, chop it in half and put it in the dry skillet with the chopped chilies, to blacken the skin. Once cream cheese is melted, add the sour cream. Stir to combine. Add the pepper and chopped chilies. Stir and add pepper, as desired. Once everything is well combined and bubbling slightly, add the cilantro. Stir serve on top of your protein with the charred chili on the side! Delicious!
Try a nice, spicy red wine alongside chicken or steak.
