Simple Pasta Salad

IMG_4553Here is a quick and easy meal you can make for lunch or dinner.  You can make it with veggies you have lying around the house too, or use different variations of cheese.

Ingredients:

Any kind of gluten-free Pasta

Tomatoes

1/2 cup shredded basil

1/2 cup feta cheese

1 yellow bell pepper

1/4 cup sherry vinegar

1/4 cup olive oil

salt and pepper to taste

Preparation:

Cook pasta according to packaging.  In a small bowl, mix sherry vinegar, olive oil and salt and pepper, as desired.  Whisk with a fork to combine.  Add veggies and cheese and gently toss for a delicious pasta salad!  Try this for a potluck too!
