Corn Hash

IMG_4386 This is a slightly modified recipe from Cooking Light magazine and it makes a great summer side dish for a bbq!  And so easy too!

Ingredient:

1 12 oz can kernel corn

1 green bell pepper

pepper – to taste

1 tsp cayenne pepper

1 tbs olive oil

2 pieces bacon

2 cloves garlic – chopped

Preparation:

In a small or medium skillet, whatever you have on hand, cook the bacon until crisp and set aside on a paper towel to drain.

Using the bacon grease, cook the bell pepper for 1 minute, then add the garlic and saute for another minute.  Then add the corn, cayenne and olive oil, plus as much pepper as you like.  Cover and allow to cook on low for 10 minutes, stirring occasionally.  Crumble the bacon and add into the mix and stir then serve.  Simple and delicious, you can also add onions or shallots, or even other peppers for differing flavors.
