2 catfish filets
3 to 4 tbs paprika
1 tbs pepper
1 tsp smoked sea salt – any kind is good, it comes in many varieties
Prep your fish! On a plate or in a shallow bowl, combine paprika, pepper and salt. Coat each side of the filets with the mixture (if you like it more coated, sprinkle some more of each on the filets).
In a large skillet, heat a little drizzle of olive oil. Place each catfish filet in the pan and cook on each side for 3 to 4 minutes, or until the fish flakes easily. That’s it! Serve it alongside a veggie side and open up a nice bottle of pinot grigio or other white wine.
