1/2 yellow onion – sliced
2 Anaheim chilies – seeded and sliced
1 cup chicken broth
salt and pepper to taste
1 tbs olive oil
1 tbs butter
Heat the oven to 350.
In a large oven proof skillet, heat the tbs of olive oil and butter together on medium heat until the butter is melted. Add the onions and chilies and saute for 2 minutes then add the catfish. Allow to cook on each side for 2 minutes.
Add the chicken broth to the skillet and simmer for 1 minute, stirring occasionally.
Place the skillet in the oven for 15 to 20 minutes, or until catfish is done. Add salt and pepper to taste and serve the fish topped with the onions and peppers and a little sauce. Try this with a dry red wine.
