Quinoa with Chicken, Broccoli and Bell Peppers

IMG_2393This is a simple, easy dinner that is delicious and filling.  Cooking the quinoa with the bell peppers was an idea I hadn’t tried before but it add a lot to the dish!

Ingredients:

1/2 cup quinoa

1 red bell pepper – chopped

1 head of broccoli

pepper – to taste

salt – to taste

2 garlic cloves – chopped

juice of half a lemon

olive oil

Preparation:

Cook the quinoa according to the packaging but add the bell peppers into the water.

In a skillet, cook your chicken in a little drizzle of olive oil, 4 or 5 minutes on each side, with a little pepper and salt, if desired.  Add the broccoli in with the chicken, including a little more olive oil, if necessary.  When the chicken is fully cooked and the broccoli is to the desired texture, add the garlic and saute all together until garlic is fragrant, another minute or two.

Add the chicken mixture to the cooked quinoa and bell peppers, then squeeze in the juice of half a lemon and stir together well.

Done!
