Miso Pasta – Gluten-free!

IMG_2342This is what happens when I can’t find anything for lunch and I use what I have on hand.  The end result was a creamy, salty pasta dish that you could add veggies to in order to make a hearty dinner.

Ingredients:

Pasta –  I used Pasta d’Oro brand spaghetti – as much as you want for your portion

2 cups miso broth

1/4 cup cream cheese

pepper – to taste

1/4 cup white onion – sliced

2 tbs parsley – fresh chopped or dried doesn’t matter

Preparation:

Prepare your pasta according to the package and drain.

While pasta is cooking, combine miso broth, onion and parsley into another pot. Bring to a boil then add cream cheese.  Stir until cream cheese is melted, over medium heat.  Add some pepper for a little spice, if you’d like.

Once the cream cheese is melted and combined in the broth, add in your pasta. Stir and serve!
