Stewed Beef Ribs

IMG_2251I hate cooking ribs because they take forever, but then I heard about a method using a stew pot and doing it on the stove, so I gave it a try!  Turned out pretty good.  In 40 minutes I had some pretty yummy ribs.  The sauce I made was a nice combo of sweet and vinegary but if you aren’t one for one or the other, just cut back on it.


Beef ribs

1/4 cup vinegar

3 tbs brown sugar

1/4 cup honey

4 garlic cloves – chopped

1 shallot – chopped

1/4 cup Worcestershire sauce

pepper – to taste


In a large stew pot, place the ribs.  Pour all ingredients over them.  The liquid shouldn’t cover the ribs, just fill about 2 inches’ worth of the pot. Cover.  Cook on a low simmer for 40 minutes.  You can test to see if they’re done with a meat thermometer.  They should be about 145 degrees.  Serve them with the sauce leftover in the stew pot and a nice red wine, like a merlot or even better a nero d’avolo.
