1 cup basil
1/4 cup flat leaf (Italian) parsley
3 cloves garlic
1/4 cup olive oil
pinch truffle salt
Pesto is super easy. I find it best to chop the basil, parsley and garlic on a cutting board before dropping it in the blender but that might be because my blender is old and doesn’t really understand its purpose in life.
In your blender, combine all ingredients and blend until well combined but not so far as it becomes a paste. Taste and if you feel like it add a little pepper or more truffle salt and mix. It’s the truffle salt that makes it but don’t overdo it!
