Veggie Soup

IMG_2210During those less than warm winter days here in So Cal I decided to make some soup!  I didn’t have any protein so went with veggies only, but I used beef bouillon to give it a different flavor.  Super easy and super tasty!

Ingredients:

2 cups chicken broth

1 cup water

1 can kernel corn

3 sweet peppers – seeded and chopped

3 green onions – chopped

1 shallot – sliced thin

1 tbs rosemary

1 tsp thyme

2 tbs pepper

1 tsp garlic salt (optional)

2 tbs beef bouillon

Preparation:

In a large pot or stock pot, combine all ingredients and bring to a boil.  Cover and let simmer for at least 30 minutes, or until the veggies are all soft.  That’s it!  So simple and so yummy.  Makes a great, quick lunch.
