Oven Fried Chicken

IMG_2186I pulled this from a random cookbook and created a gluten-free “fried” chicken that baked in the oven.  The chicken was super moist and flavorful and it really wasn’t all that hard!  I love a good fried chicken and this made enough for one chicken breast so double, triple, etc. for more!

Ingredients:

chicken breasts

1/4 sour cream

3 tbs olive oil

1 tsp cayenne pepper (less if you don’t like too much spice)

1 tbs lime juice (or lemon juice)

1/2 cup gluten-free oat flour

pepper – to taste

Preparation:

In a Ziploc bag, combine the sour cream, lime and olive oil.  Toss in your chicken breast and let marinate at room temperature for 30 minutes to an hour.

Heat the oven to 400.  In a bowl, combine the flour, pepper and cayenne.  Remove the chicken from the mixture, let most of it drip off, then coat with flour.  Shake off excess.  Line an oven proof pan with parchment paper and bake for 30 to 40 minutes, flipping over at the 15 minute mark.  Chicken should be 175 degrees, when using a meat thermometer, when done.  Let it rest for 5 minutes before serving.

While it doesn’t have the same big crunch as regular fried chicken it’s delicious and totally worth it!
