I find that cilantro brings out the flavor of cod really well. Don’t know why, but it seems to work! I enjoyed this with a side of asparagus cooked in the oven at 350 for 20 minutes. Toss it with a little truffle salt for something extra.
2 small yellow tomatoes
1/2 cup cilantro
1/4 red onion
1 garlic clove
pepper – to taste
In a skillet, heat some olive oil. Place your cod filets in the pan and cook for 4 to 5 minutes per side.
As your fish cooks, chop the tomatoes, cilantro, garlic clove and onion up and stir together in a bowl. Add a little bit of pepper. That’s it! So super easy and full of flavor!
