Quick Beefy Quinoa

IMG_2155For a quick dinner or lunch, or even a side, here’s a tasty dish!

Ingredients:

1/2 cup quinoa

1 tbs beef bouillon

1 shallot – sliced

2 cloves garlic – chopped

olive oil

pepper – to taste

Preparation:

Boil a cup of water in a small saucepan, add the quinoa and bouillon, stir, cover and cook for 15 minutes.  I find stirring halfway through keeps it from sticking to my old pan.

Coat a small skillet with olive oil and saute your shallots until soft and slightly browned.  Toss the garlic in halfway into cooking the shallots – about 2 minutes in.  When the quinoa is cooked, stir in the shallots and garlic, add some pepper and stir.  The beef bouillon give it a nice flavor while the shallots and garlic bring it up to another level!  I make this when I’m in a hurry for dinner or lunch.
