Lamb Kabobs

IMG_2154Always wanted to make these!  Found some lamb chops in the clearance spot at the grocery store and though this was my chance!  There’s something about lamb that freaks me out when I cook it but it always turns out delicious!  I served these by themselves for a light meal.

Ingredients:

2 lamb chops – cut into bite sized squares

1 yellow bell pepper – cut into bite sized squares

1 red bell pepper – cut into bite sized squares

1/2 red onion – also cut into bite sized pieces (seeing a pattern here…)

3 or 4 large cloves of garlic – cut into thirds (keep in mind you’re skewering these so chop accordingly)

olive oil

Preparation:

Preheat the oven to 350 degrees.  Line a baking pan with foil.  Chop all your veggies and cut up your meat.  On skewers, alternate pieces of lamb, peppers, onions and garlic.  Lay these out on your pan and cover generously with olive oil, rotating to get all sides.  Add a little pepper, if you want to!

Cook for 15 minutes for medium.  That’s it!  So easy and so delicious, this made 4 kabobs with a little leftover lamb that was a special treat for the dogs!

If you want to make a quick side sauce, just stir some sour cream with a tbs of oregano, 2 tbs of basil, and some pepper.

I know lamb is typically paired with red wine but I had a bottle of chardonnay to finish off and it was pretty good!
