Quinoa with Roast Beef and Yellow Peppers

IMG_2095This was a matter of what to do with the leftover roast from Christmas, and since leftover turkey and quinoa turned out so nicely, I decided to give it another shot!


1/2 cup quinoa

2 cups chicken broth

1 cup water

1 yellow bell pepper – chopped

1/2 red onion – sliced

3 cloves garlic – chopped

1 tsp garlic salt

2 tbs pepper

olive oil

leftover roast – 1 cup of beef, chopped into small cubes or shredded


In a large pot, cover the bottom with a thin layer of olive oil and toss the bell peppers and onions. This takes about 2 or 3 minutes.  Once those are nice and soft, add the garlic and saute for 1 minute.  Add the chicken broth and water then the quinoa.  Toss in the garlic salt.  Stir, cover and simmer for 15 minutes.

After 15 minutes, stir and add the beef and pepper.  Simmer for another 5 to 10 minutes or until the liquid is mostly absorbed. Done!  Serve with some sour cream on top for a little something extra!  This makes two good sized bowl fulls.
