Jalapeno and White Balsamic Deviled Eggs

IMG_2082Kick it up with a nice, spicy deviled egg I’ve added to my roster!  This is what happens when I buy a package of eggs – I play with them. Sometimes it is okay to play with your food!

Ingredients:

6 hard-boiled eggs

1/8 cup of mayo

3 tbs Dijon mustard

2 tbs white balsamic vinegar

1 tbs (or 1 tsp if you aren’t into the spice) dried jalapeno

Preparation:

Cook, peel and halve your eggs.  Remove the yolks and place them in a bowl with the mayo, mustard, vinegar and jalapeno. The white balsamic is important to this recipe – it adds a very different taste than white vinegar or regular balsamic.  Dijon also adds a different flavor than plain or other mustard.   Place a spoonful of the yolk mixture into each egg half.  Retain a little dried jalapeno to top off each egg, if you want to!
