6 hard-boiled eggs
1/8 cup of mayo
3 tbs Dijon mustard
2 tbs white balsamic vinegar
1 tbs (or 1 tsp if you aren’t into the spice) dried jalapeno
Cook, peel and halve your eggs. Remove the yolks and place them in a bowl with the mayo, mustard, vinegar and jalapeno. The white balsamic is important to this recipe – it adds a very different taste than white vinegar or regular balsamic. Dijon also adds a different flavor than plain or other mustard. Place a spoonful of the yolk mixture into each egg half. Retain a little dried jalapeno to top off each egg, if you want to!
