Cotjia Cheese and Hot Sauce Deviled Eggs

IMG_2084In keeping with the theme of the month, I took what I had available in the fridge and put it in a deviled egg!  The theme is deviled eggs though, not what I have in the fridge…  Cotija cheese goes great on tacos but it also make a pretty snazzy deviled egg.  As with any of my recipes, leave out the hot sauce if you don’t like the heat!

Preparation:

6 hard-boiled eggs

1/8 cup mayo

3 tbs stone ground mustard

2 tbs white vinegar

1/8 cup Cotjia cheese – crumbled

a couple drops of hot sauce – any kind!

sprinkle of cumin for each egg

Preparation:

Cook, peel and halve your eggs.  Drop the yolks into a bowl.  Add the mayo, mustard, vinegar and hot sauce.  Stir until smooth then add the cheese.  Add a bit more mayo or mustard, if you think it needs it.  Stir until well combined and drop a spoonful into each egg half.  Top with just a little sprinkle of cumin.

My biggest thing with deviled eggs is always tasting as I go.  Not everyone has the same taste buds so not everyone will like the spiciness, the vinegar flavor or the mustard over mayo.  Deviled eggs are the perfect way to test your flavors and find out what you like, adding a little bit more of your preferred ingredients to get the flavor profile you want!
