Sirloin Steak, Cauliflowers and Pears

IMG_2085This might look like a plate of steak and potatoes but those are pears!  I’m not supposed to eat potatoes and I had a couple pears sitting in the fridge that were doing nothing, so I paired them with onions and cauliflower, just as one might do with potatoes.  It made for a delightfully sweet side!

2 sirloin steaks

pepper to taste

2 Bosc pears – chopped into bite sized pieces – don’t forget to core them!

10 to 12 cauliflower florets

1/4 sweet onion – sliced

olive oil

Prep your veggies and start with the onions and a drizzle of olive oil in a skillet.  Let them brown – about 2 to 3 minutes – then add the pears and cauliflower.  You may want to add some more olive oil, if you find your veggies getting sticky towards your skillet.  Let these cook on medium heat for a good 5 minutes before starting on your steak. Allow them to continue to cook, stirring occasionally, as you cook your steaks, so the pears are good and soft.

For your sirloins, first dry them off with a paper towel.  Then add a little pepper to each side.  Heat up a separate skillet – it’s hot enough when a few droplets of water sizzle away immediately.  Just flick some water at it.  That’s what I do!  Cook the steaks about 4 minutes on one side, 3 minutes on the other, for 1 1/2 inch thick steaks and for medium rare.  Add a minute or two for medium or well.  Let them rest for a couple of minutes on plates before serving.

I opened up a bottle of Apothic Dark to enjoy with this dish and it was perfect!
