Artichoke Dip

IMG_2031One of my all time favorite appetizers for when I throw a party is this hot artichoke dip.  It’s simple and easy to make.  Just mix stuff together, put it in a baking dish and bake!  I do love a quick appetizer dish that will feed a decently sized group and this is it!

Ingredients:

1 can artichoke hearts – 16 oz or so

1 cup shredded Parmesan cheese

1 cup mayo

1 chopped red bell pepper (I only do red to add color, any bell pepper will do)

1 pkg feta cheese – 14 oz or so

Preparation:

Preheat oven to 350 degrees.  In a large bowl, mix all the ingredients together.  Spread it out in a baking dish and bake for 30 minutes.  Done!

To jazz it up, add some pepper and jalapenos, or toss in some cauliflower for a different texture. To give it more pizzazz, serve it in the hollowed out cauliflower!IMG_2032
